Antioxidant: An antioxidant is a chemical that prevents the oxidation of other chemicals in the body. In biological systems, the process of oxidation produces highly reactive free radicals. These free radicals readily react with other molecules causing damage to them. In some cases the body uses this reaction to fight infection. In other cases, the damage may be to the body's own cells. Only green tea retains its powerful antioxidant properties. One cup of green tea can have an antioxidant activity greater than a serving of broccoli, spinach, carrots or strawberries.
Assam: Tea grown in the state of Assam, in India. These (generally black) teas are known for their strong, deep red infusions.
Bergamot: Essential oil of the bergamot orange used to flavor a black tea base to make Earl Grey tea.
Black Tea: Prepared from green tea leaves which have been allowed to oxidize, or ferment, to form a reddish brew. These are the types of teas most often found in your local supermarket, usually in bags.
Ceylon: Teas made in Sri Lanka.
Cha: Tea. Romanized spelling of Chinese and Japanese character referring to tea.
Chai: Tea. Often refers to masala chai, or spiced tea, a strong black tea infused with milk, sugar, and spices.
Darjeeling: Tea grown in the Darjeeling region, a mountainous area around the Himalayas, of India. Darjeeling teas can be black, green or oolong.
Earl grey: Black tea that is scented with the essential oil of bergamot, a citrus. A very common English tea.
Formosa: Tea produced in Taiwan, typically oolong teas.
Green: Unfermented, dried tea, more commonly found in China and Japan.
Jasmine: Black tea scented with jasmine flowers, typically made with green Pouchong tea as the base.
Oolong: A form of tea characterized by lighter brews and larger leaf styles. Oolong falls between a black and a green tea. It only undergoes a small amount of fermentation during processing.
Orange pekoe: Tea is not flavored with orange. It refers to the grade of tea, consisting of large pieces of leaves or even whole leaves. Orange pekoe is a high-quality grade of tea.
Tisane: Teas produced from the leaves of plants other than the tea plant, herbal tea.
White: A special type of green tea. Distinguished by the presence of the white hairs of the tea flush (baihao) and a lighter green, almost clear, infusion.
Yunnan: A Chinese black tea with a lightly peppery flavor.
